This beautiful and easy recipe combines two of our favourite things, unicorns and fudge. Perfect!

In the past we have made some amazing fudge recipes. Fudge is so much fun to make with kids because there is such a wide variety of recipes and techniques you can use.

We started our fudge making journey by learning some of the kitchen and candy science behind this delicious, melt in your mouth treat when we made basic chocolate and vanilla fudge recipes.

Then we branched out into some incredibly delicious Harry Potter Butterbeer Fudge that was fit for a wizard! Followed up by a beautiful Layered Rainbow Fudge that was the most delicious way to memorize the colours of the rainbow! We even made an edible Fudge Play Dough!

Today we wanted to add a little mythical magic to our fudge by using all the candy science lessons we have learned, and apply them to an incredibly easy and fast fudge recipe that looks amazing! Perfect for a unicorn themed party.

Oh, did I mention we love unicorns too?

This fudge would be the perfect addition to a book club meeting for Zoey and Sassafras!

OK, onto the fudge making!

Rainbow Unicorn Fudge Recipe

INGREDIENTS

1 12-ounce package of white chocolate chips (buy the good stuff, makes all the difference!)
1 7-ounce container of marshmallow fluff
3 cups white granulated sugar
3/4 cup softened butter
1/2 cup of half and half
Pink, purple and yellow food coloring
Unicorn sprinkles
Sugar unicorn horns
Pot (medium)
Stove top
3 measuring cups or bowls
8×8 baking pan lined with parchment paper
Cooking spray

DIRECTIONS

Add the white sugar, butter (soften a bit first if needed), and half and half to a large mixing bowl. Mix until creamy either by hand or with a mixer. Usually with the kids we do it by hand because it’s more tactile and physical.

Once it is mixed, transfer the whole mixture to a medium size pot and cook on medium heat. Don’t forget to stir constantly. Remember from our other fudge lessons, sugar burns quickly, we need to keep it moving to prevent burning and ruining the whole batch.

Continue to cook mixture until it just begins to bubble. Cook for another 4 minutes, stirring constantly.

Take the pan off the heat and stir in the chips and marshmallow fluff. Keep stirring until it is smooth and creamy.

Divide the mixture evenly into three measuring cups or bowls.

Prepare the pan by spraying it with cooking spray and then lining it with parchment paper. Spray pan with cooking spray and cover bottom and sides of the pan with parchment paper.

Add 2-3 drops of pink food colour to one measuring cup, 2-3 drops of purple to another and 2-3 drops of yellow to the last cup. Mix each colour thoroughly.

Add first color to pan and spread evenly. You can lay the colours down in whatever order you prefer. Then add the next colour and spread evenly over the first colour and the same with the last color.

Add sprinkles to the top. Kids LOVE this step! Come up with cool designs and patterns.

Once it is sprinkled to your satisfaction, press down gently. Cover the baking pan with foil and place it in the refrigerator until the fudge is firm. About 2 hours.

Once it is set, carefully remove it from the pan and place it on a cutting board. Using a sharp knife, cut it into 1″ squares and enjoy the magical goodness!
