I love it when I find a recipe that becomes a tried and true mainstay in our home that is asked for over and over again. These Chocolate Chip Banana Muffins are exactly that! I’ve been making them for years and I love the versatility and the ability to sneak in so much good stuff!
Packed full of coconut oil, ground flax seeds, and bananas these muffins not only pack a healthy punch but they taste fantastic. My boys can never eat just one.
As a HUGE bonus, these muffins are fantastic at helping get things moving for kids that are struggling with constipation. This can be a big issue in our house and when that happens I whip up a batch of these muffins and everything gets moving, quickly, easily and with no fuss!
I also love how forgiving and versatile this recipe is. I often make substitutions based on what I have on hand. Running out of Coconut Oil? Use some apple sauce (or blend up an apple to create your own apple sauce). Don’t like chocolate? Sorry we can’t be friends… but you can still make these with dried fruit or nuts. The sour cream can easily be replaced with plain yogurt or my favourite plain Greek yogurt. So much flexibility makes this Momma very happy with this Chocolate Chip Banana Muffins recipe! 1/2 cup all-purpose flour
1 1/4 cup whole wheat flour
1/4 cup sugar
1/2 cup brown sugar
1/2 cup ground flax seeds (or flax seed meal)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup coconut oil
1/2 cup hot water
1/2 cup low fat sour cream (or I love to sub in Greek Yogurt)
4 mashed ripe bananas – A great job for the kids!
1 cup semisweet chocolate chips or more… because that’s the way Momma likes it!
In a large bowl, combine the flours, sugars, flax seeds, baking powder, baking soda, salt, cinnamon and nutmeg. In another bowl, combine the coconut oil and hot water, stir together until coconut oil is melted add more hot water if needed, then mix in eggs and sour cream. Stir moist ingredients into dry ingredients just until moistened. Fold in mashed bananas and chocolate chips. Fill greased muffin cups two-thirds full. Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean (this can be a challenge due to the chocolate chips!). Cool for 5 minutes before removing your Chocolate Chip Banana Muffins from the muffin tray. Enjoy!
