Chocolate Chip Cookies With A Healthy Bite

I love sneaking veggies and fruits into our food. Although one of my son’s will happily eat his fruits and veggies, my other son has struggled with this for most of his life. For him it is a combination of sensory issues and trauma history. If the boy could live on carbs alone, he would be one happy kid! We joke that he is all about the P Foods – pizza, pancakes and pasta.

Since I know fruits and veggies are a legitimate struggle for my son, I decided not to make it an issue. This is not a hill I am willing to die on. It’s not a hill I am even willing to climb. I just go around it by sneaking the fruits and veggies into his food.

One of my favourite ways to do this is with cookies!

Chocolate chip cookie with a healthy bite

I take a childhood favourite, chocolate chip cookies, and pack them full of all sorts of goodness: apple, banana, coconut oil, flaxseeds, cinnamon, nutmeg, and black strap molasses. These cookies are so moist and delicious. They can stay on the counter or out at a party for hours and don’t dry out. Not that they ever last that long. These cookies are guaranteed to disappear quickly!

1/2 cup softened butter
1/4 coconut oil
1 cup brown sugar
2 tbsp black strap molasses
2 eggs
1 small apple
1 small banana
1 tbsp water
2 2/3 cups flour
1/4 ground flaxseed
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 cups chocolate chips

In a large bowl combine butter and coconut oil. Microwave approximately 15 seconds until softened and able to blend smooth. Add brown sugar, molasses and eggs. Beat together until smooth.

In a blender (I use a magic bullet) place cored and chopped apple, banana and water. Blend. Add blended fruit mixture to large bowl with butter mixture and mix thoroughly.

Stir together all the dry ingredient in a separate bowl, flour, flaxseeds, baking soda, baking powder, salt, cinnamon and nutmeg.

Add dry mixture to large bowl with butter mixture and beat together. Add chocolate chips and stir until well mixed.

Spoon onto ungreased cookie sheet. Bake 10 – 12 minutes at 375 degrees. Let sit for 5 minutes before transferring to cooling tray.

After many years of sneaking the fruits and veggies in, I have discovered a big benefit, my son will now willingly eat his fruits and vegetables. I never let it become a power struggle and by sneaking them in, he has developed a taste for healthy choices and will now happily eat his fruits and veggies… as long as the texture works for him. Sensory issues are not something as easily conquered!
